Pork Tacos With Red Cabbage Slaw and Guacamole

Simple guacamole is the perfect complement to juicy pork tenderloin and crunchy slaw. To make the guacamole in advance, leave the pit in with the mashed avocado and place plastic wrap directly on the surface to prevent browning; remove the pit right before serving.

Ingredients
1 tsp (5 mL) smoked paprika
1 tsp (5 mL) chili powder
1/2 tsp (2 mL) ground coriander
1 lb (454 g) pork tenderloins
8 whole grain whole wheat tortillas, (6 inches/15 cm)
1/3 cup (75 mL) chopped fresh cilantro

Cabbage Slaw:
2-1/2 cups (625 mL) finely shredded red cabbage
1/4 cup (60 mL) Greek-style yogurt
1 tsp (5 mL) lime juice
1/2 tsp (2 mL) liquid honey
1/2 tsp (2 mL) cider vinegar
1 pinch salt
1 pinch pepper

Guacamole:
1 ripe avocado, pitted and peeled
1 tbsp (15 mL) lime juice
1/4 tsp (1 mL) pepper
1 pinch salt
1 pinch smoked paprika
1 clove garlic, minced
